Once it warms up, it cooks very evenly. My only complaint is that I cleaned it immediately per the directions, and the inside does not look like it did when I bought it.

Love this pan, it works better then the non-stick I have used in past. For those of you considering upgrading your cookware to professional grade stainless steel, look no further. It heats evenly and quickly, retains heat for a long time, sears and browns well without burning, handles comfortably, cleans up easily and looks great!

Comments:

The pan cooks food well but food, such as eggs, will stick without using butter or spray. The handle does not get hot. Flames from a gas stove will leave marks on the bottom of the pan. Be sure to follow the instructions for cleaning the pan. Do not use citrus soaps (they leave stains on stainless steel, yes ironic isn't it) and be sure to get the recommended polish. A little extra effort cleaning the pan is worth not having non-stick coating flakes in your food.

The saucepans are usually used for dinner prep. Cooking vegetables and steaming. The frypans are used for pancakes and again for dinner prep.
